The 16th deputy head of the Shijo-ryu Knife Ceremony (A Contemporary Master Craftsman and Recipient of the Yellow Ribbon Medal), who descends from the Takahashi Family, the chefs of the Tokugawa Shogunate, will demonstrate the Shijo-ryu Knife Ceremony. Enjoy authentic Japanese cuisine in a renovated traditional Japanese house within Arimatsu's Important Preservation District for Groups of Traditional Buildings, a Japan Heritage Site. While creative cuisine is becoming mainstream these days, Japanese Cuisine "Yamato" offers authentic, traditional Japanese cuisine. Supervised by owner Masami Saki (Shijo-ryu Knife Ceremony Master and former Executive Chef of the Enakyo Grand Hotel), the restaurant continues to preserve traditional flavors. There will also be a special demonstration of the traditional Japanese cuisine ritual, the Shijo-ryu Knife Ceremony. Experience the solemn etiquette and expert techniques of this approximately 1,200-year-old tradition up close.
